PREPARATION METHOD

Eggplants are slowly grilled over a wood fire until their skin becomes slightly charred.  
2. Peeling & draining  
Let the eggplants rest covered for 5 minutes, peel gently, then halve and let them drain for 120 minutes to remove excess moisture.
